Notice, if you will, the complete absence of tomatoes. This is a true Texas chili, as made by my husband's grandfather (Peedink). Originally, it was "Damn Good Chili" and apparently his wife (Snooky) took exception to the cussing, so it has long since been renamed "Good Chili." I am now told that she wouldn't have had a problem with the wording, so...a family myth? Were they sparing the little children an extra curse word or two? Regardless, it is relatively simple and very tasty.

Hubby suggests that Peedink added jalapeƱos to the recipe later. Go with the heat you want.

1 Tbsp. paprika
1 Tbsp. pepper
1 tsp. cumin (and no more! don't be tempted-- trust me)
2 Tbsp. chili powder
2 Tbsp. salt (I start with 1 and add to taste)
1/3 tsp. cayenne pepper
4 pods red pepper (1 Tbsp. or to taste crushed red pepper)
2 cloves garlic, crushed
1 large onion, chopped
4 lbs. meat (hamburger or ground pork or ground turkey or combination)
2 quarts water

Combine all but meat in a large saucepan and bring to a boil.
Brown meat separately and drain. Add to boiling mix. Boil all
till tender. Fish out the red pepper pods, if used, before
serving.
